Kitchen Korner

            We are in the busiest month of the season and the kitchen is abuzz with activities and aromas. We will be turning over our kitchen to the Men's Club on February 15 for their Hot Dog Lunch and all the proceeds will go to the Men's Club.

            On February 18, our yearly Kitchen Party celebrates the existence of the Village Cafe for over 30 years. This will be an evening of good food and good music from Nick Gillette and his band, along with some kudos to some of the familiar faces in the kitchen. We will have our Italian Festa Lunch on February 29 with Sausage and Peppers, Meatball Subs, Antipasto Salad, Mary Jane Dow's Italian Wedding Soup, and my "Amore Cake" that is far from sugar free! Enjoy this exciting time at our Cafe and in our Village.

            Below, is the recipe of the French Toast Casserole that was at my Sunday Brunch - Write it down this time Barbara!!!!

 

FRENCH TOAST CASSEROLE:   Makes 8 servings

1 cup packed brown sugar

1/2 cup butter

2 Tablespoons light-colored corn syrup

1 pound loaf sliced cinnamon swirl bread (can have raisins too)

8 eggs, lightly beatened

3 cups Half and Half or light cream

2 tsps. vanilla

1/2 tsp. salt

1 Tablespoon orange liqueur (optional)

            In a medium saucepan, combine brown sugar, butter and corn syrup; cook and stir over medium heat until mixture comes to a boil. Boil for one minute. Pour into a 3 quart rectangular baking dish.

            Arrange bread slices on top of brown sugar mixture. In a large bowl, whisk together eggs, half-and-half, vanilla and salt; pour over bread slices. Cover and chill for 4-24 hours.

Preheat oven to 350 degree. Let baking dish stand at room temp. while oven preheats.

            Bake for 40-45 minutes or until top is brown and puffed and a knife inserted near center comes out clean. Let stand 15 minutes before serving. If desired, drizzle with orange liqueur.
